Après chaque récolte de miel, les hausses qui contiennent les cadres gorgés de miel sont entreposées dans la miellerie. L’opération qui suit s’appelle la désoperculation des cadres : elle consiste à enlever la fine pellicule de cire qui protège le miel (l’opercule) de chaque côté du cadre. Pour cela nous utilisons un simple couteau muni d’une longue lame.
Cette opération est faite à température ambiante sans chauffe (gage d’une qualité supérieure). Ensuite nous rangeons les cadres dans l’extracteur, à l’intérieur de celui-ci, les cadres tournent, progressivement, la force centrifuge éjecte le miel liquide logé à l’intérieur des alvéoles en cire.
A la sortie de l’extracteur, le miel passe à travers un premier tamis permettant de retenir les petites particules de cire puis le miel est orienté vers un autre tamis plus fin posé sur un maturateur d’une capacité d’environ 300 Kg. Une fois le maturateur remplit, le miel va reposer quelques jours (décantation) les derniers résidus microscopiques de cire qui sont passés à travers le dernier filtre étant remontés à la surface, on peut écumer le miel, puis le mettre directement en pot ou le stocker en vue d’une mise en pot ultérieure.
